First: the sauce recipe.... Not only is it great for healthy pasta dishes but its also great as a pizza sauce!
Ingredients:
1/2 large eggplant
1 zucchini
1 onion
1 clove of garlic
1 carrot
big can of tomato puree
big can of crushed tomatoes
2 cans of italian crushed tomatoes
sea salt and pepper to taste
italian seasoning
Directions:
Dice up all the veggies and spray your skillet with olive oil spray and set to med high heat.
Add the veggies to the hot skillet and add sea salt and pepper and italian seasoning and saute for about 5-6 mins.
Then add all the cans of tomatoes and let it simmer for about 3 hours. Stir occasionally.
Note: You may wanna keep tasting and add sea salt as needed.
Let it cool completely and then puree together with either a blender or like me, an emulsion blender (or my motor boat as I like to call it). :)
Makes about 10.5 cups of sauce. 93 calories per cup!!
Next: Lasagna- Holy Cow it's good!!
Ingredients:
About 4-5 cups of sauce (I used 5 and it was just right for us!)
1lb ground lean turkey breast
whole wheat lasagna noodles (I only used half the pkg)
1 pkg frozen spinach- thawed & drained
1 small tub of 2% cottage cheese
6 tsp of parm cheese
2 eggs
1 pkg part skim shredded mozzarella
itialian seasoning
Directions:
Preheat oven to 350 degrees.
Get a big pot of boiling water going and cook your lasagna noodles.
In a skillet set on med high, spray olive oil cooking spray and add turkey and a couple of dashes of italian seasoning.
While that's browning, in a bowl, mix cottage cheese, eggs, and parm cheese and a dash or two of italian seasoning well. Set aside.
When turkey is almost done add in your thawed and drained (very important to squeeze out all the excess water) spinach.
Once the turkey is done and the spinach is heated thru, add your sauce. Mix well.
You're ready to layer:
First you wanna put some meat sauce in the bottom of the pan so the lasagna doesn't stick.
Layer of noodles
Layer of cheese mixture.
Layer of sauce.
Repeat.
Your last layer should just be noodles and sauce and then add the pkg of mozzarella cheese on top.
Cover and bake for 1 hour. Uncover the last 15 min to let your cheese get bubbly and golden!
NOTE: Because I only used 1/2 pkg of lasagna noodles that made a huge difference in calories!!
1/9 of the pan= 330 calories
1/12 of the pan= 248 calories!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
If you decide to use the entire pkg of noodles then its 400 calories per 1/12 of the pan!
